I've always loved grabbing a quick breakfast from Starbucks, but since cutting out fast food and focusing on a healthier lifestyle, I needed a new solution. Enter: Homemade Sous Vide Egg Bites. These little bites of joy are my answer to needing something protein-packed, light enough for my small morning appetite, yet substantial enough to pair with my beloved iced coffee.
Okay, I know these aren't new, and honestly, I am behind the times (very apropos, to be honest), but I simply wasn't motivated to make them even though I had been seeing them around. Why wasn't I motivated? Well, likely because if I wanted egg bites, I could drive across the street and get them at Starbucks for way less effort—yeah, I'm not too proud to admit that I love a good convenient drive-thru every now and then.
However, my husband and I completely cut out fast food recently, and that's when I realized I finally had to make these. And dang if I shouldn't have done this sooner. They're TOO EASY!
They are also way more nutrient-dense and delicious than Starbucks. Oh, and if you don't like cottage cheese, this recipe is still for you! You cannot taste it at all and it really makes these little egg bites so rich and delish! They are now officially on repeat for my Sunday meal prep, and I'm finally sitting down to share them with you.

Homemade Sous Vide Egg Bites
Makes 4-6 servings (depending on individual portions, 2-3 egg bites per serving)
Ingredients:
10 large eggs
225g cottage cheese (about a cup)
A pinch of salt and pepper
Avocado oil spray (or any oil spray)
Filling Options:
Ham, cheddar, and broccoli
Chicken sausage, red pepper, and gouda
Spinach, red pepper, and feta
Sausage, potato, and cheddar (for a heartier option)
Any other desired combination
Instructions:
Preheat Your Oven: Set your oven to 375°F (190°C).
Blend the Base: In a blender, combine the eggs, cottage cheese, salt, and pepper. Blend until smooth. If you have a blender with a pour spout, like a Ninja (that's what I use), it makes pouring the mixture a breeze.
Create a Water Bath: Place your silicone muffin pan on a large baking sheet. Pour about 32 oz of water into the baking sheet to create a water bath (filling about half of the baking sheet). This gentle cooking method helps keep the egg bites moist and tender.
Grease the Muffin Pan: Spray the silicone muffin pan with avocado oil (or your preferred oil spray) to ensure the egg bites come out easily.
Fill the Muffin Pan: Pour half of the egg mixture evenly into the muffin cups.
Add Your Fillings: Choose your desired fillings. Sauté any meats and veggies for a few minutes to soften them. This step ensures they are perfectly tender in the final egg bites.
Top with Remaining Egg Mixture: Pour the rest of the egg mixture over the fillings, and sprinkle a little extra cheese for good measure.
Bake to Perfection: Bake in the preheated oven for 25-35 minutes. Start checking at 25 minutes to avoid overcooking. The egg bites should be moist and springy to the touch.
Cool and Enjoy: Let the egg bites cool slightly before removing them from the silicone pan. Enjoy them warm or store them for later.
Storage Tips:
Refrigerate: Store any leftovers in an airtight container in the refrigerator for up to 5 days. Reheat in the microwave for 60 seconds before eating.
Freeze: Place cooled egg bites on a baking sheet to freeze. Once frozen, transfer to a freezer-safe bag or container. Reheat from frozen in the microwave for 1-2 minutes.
